I love the fact that you can make the sweet potatoes and even the black beans ahead of time and just heat up on the day, and for this reason, this is a favorite in our house.
I served the wraps with baby spinach, homemade guacamole (if you can call mashed up guacamole with lime juice guacamole!), salsa and alpro yogurt (which I use instead of sour cream).
And there is plenty let for lunch tomorrow :-)
Looks great! I just made a wrap as well, although it wasn't quite as inventive :P
